Ingredients
  

  • 2 cups frozen blueberries
  • 1 cup water
  • cup Swerve Sweetener (or your preferred erythritol blend)
  • cup allulose sweetener
  • 1 teaspoon vanilla extract
  • ½ teaspoon glucomannan or xanthan gum (for thickening)

Instructions
 

  • Start by combining the frozen blueberries, water, Swerve, and allulose in a medium saucepan. Place it over medium heat and bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to a low simmer and let it cook for about 10 minutes. Then, take the pan off the heat and gently mash the berries with a fork.
  • Stir in the vanilla extract. Carefully sprinkle the glucomannan or xanthan gum over the surface and whisk it briskly until it's fully combined and smooth. Allow the syrup to cool down completely to thicken.

Notes

Pro Tip for Clear Syrup: If you prefer a smooth, seedless syrup, strain the berry mixture through a fine mesh sieve *after* mashing the berries (before adding vanilla and thickener). Press the solids to extract all the liquid. Return the clear liquid to the pan, then stir in the vanilla and whisk in the thickener as directed above.
