Equipment

  • 10-inch cast iron skillet

Ingredients

Dry Ingredients

  • 1.5 cups Wholesome Yum Blanched Almond Flour
  • 1 tablespoon Baking powder
  • 1/3 cup Besti Monk Fruit Allulose Blend for a lightly sweet touch
  • 1 teaspoon Sea salt

Wet Ingredients

  • 2/3 cup Unsalted butter, melted plus a little extra for greasing
  • 2/3 cup Unsweetened almond milk
  • 6 large Eggs
  • 1 tablespoon Sweet corn extract your secret to that authentic corn flavor!

Instructions

  • Get Started: Preheat your oven to a warm 400°F (204°C). Grab a 10-inch cast iron skillet and generously grease it with some butter – this helps create that perfect golden crust.
  • Mix Dry Goodies: In a large mixing bowl, combine the almond flour, baking powder, Besti sweetener, and sea salt. Whisk everything together until it's well blended.
  • Combine Wet Ingredients: Gently stir in the melted butter, unsweetened almond milk, and eggs. Mix until your batter is smooth and lump-free. Now, add the sweet corn extract and stir it in – this is what makes it taste like the real deal!
  • Bake to Perfection: Pour the smooth batter into your prepared skillet, making sure to spread it evenly with a spatula.
  • Golden Brown Finish: Pop the skillet into your preheated oven and bake for about 35 to 40 minutes. You'll know it's ready when the top is beautifully golden brown and a toothpick inserted into the center comes out clean. Be careful not to overbake, as this can make it dry!
