FOR THE ZESTY CILANTRO LIME CREMA

  • 0.5 cup plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 0.5 tablespoon fresh lime juice
  • 1 teaspoon minced garlic from 1 small clove
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon onion powder
  • 0.25 cup fresh cilantro finely chopped

FOR THE CRISPY BEEF TACOS

  • 0.5 medium yellow onion finely chopped
  • 1 pound lean ground beef
  • 1 package taco seasoning mix approx. 1 ounce
  • 8 flour tortillas 6-inch
  • 1.5 cups shredded mozzarella cheese
  • 1-2 tablespoons avocado oil or vegetable oil

Instructions
 

  • Whip Up the Zesty Crema: In a blender, combine the Greek yogurt, light mayonnaise, fresh lime juice, minced garlic, sea salt, onion powder, and fresh cilantro. Blend until it’s wonderfully smooth and creamy. Transfer to a small bowl and pop it in the fridge to chill while you prepare the tacos.
  • Brown the Beef: Heat a large skillet over medium heat. Add the finely chopped onion and sauté for about 3-5 minutes until it’s soft and fragrant. Next, add the lean ground beef to the skillet. Cook, breaking it apart with a spoon, until it's fully browned. Drain any excess fat for a lighter, healthier finish.
  • Season to Perfection: Stir in the entire package of taco seasoning mix along with a splash of water (about ¼ cup). Let it simmer gently for a few minutes until the beef is fully coated and the liquid has absorbed, creating a rich and flavorful filling. Add a pinch of black pepper if you like a little extra kick.
  • Build Your Tacos: Lay a flour tortilla flat on a clean surface. Sprinkle about 1 ½ tablespoons of mozzarella cheese on one half of the tortilla. Spoon a generous portion of the seasoned ground beef mixture over the cheese. Add a little more cheese on top, then fold the tortilla over to create a perfect half-moon shape. Repeat this process with the remaining tortillas and filling.
  • Get Them Crispy: Lightly oil a medium saucepan or skillet and place your folded tacos in it over medium heat. Cook for 2-3 minutes per side, gently pressing down with a spatula, until they are beautifully golden brown and delightfully crispy. Add a touch more oil if needed to ensure every edge is perfectly crunchy.
  • Serve It Up: Arrange your warm, crispy tacos on a platter. Drizzle them generously with the chilled cilantro lime crema. For an extra burst of freshness, sprinkle with additional fresh chopped cilantro. Serve immediately and enjoy your healthy, restaurant-worthy taco night!
