Ingredients
  

  • 1 pound ground chicken (16 ounces)
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • salt and black pepper to taste
  • 6 small flour tortillas
  • 3 jalapeños divided and finely chopped
  • 6 ounces light cream cheese softened
  • 1/4 cup shredded cheddar cheese
  • 6 slices cooked bacon crumbled
  • 3 green onion sprigs sliced (2 for topping mix, 1 for garnish)
  • splash cooking oil (avocado or olive oil recommended)

Instructions
 

  • In a medium bowl, combine the ground chicken with garlic powder, paprika, salt, and black pepper. Mix everything together thoroughly. Take two of the chopped jalapeños and gently fold them into the chicken mixture.
  • Lay your small flour tortillas flat on a clean surface. Carefully spread a thin, even layer of the seasoned chicken mixture onto one side of each tortilla, pressing it down firmly to ensure it sticks well.
  • Heat a large skillet (a cast-iron skillet works great for extra crispiness!) with a splash of cooking oil over medium-high heat. Once hot, carefully place the tortillas, chicken-side down, into the pan. Cook for about 3-4 minutes until the chicken is beautifully golden brown and completely cooked through.
  • Using a spatula, flip the tacos over so the plain tortilla side is now facing down. Cook for another 1-2 minutes until this side of the tortilla is golden and crispy. While it's cooking, grab a small bowl.
  • In that small bowl, gently mix together the softened light cream cheese, shredded cheddar cheese, crumbled cooked bacon, and the remaining chopped jalapeño. Also, add two of the sliced green onion sprigs to this mixture.
  • Spoon and spread this creamy, cheesy mixture evenly over the hot, cooked chicken side of each taco. For an extra melty finish, you can cover the skillet for about 1-2 minutes until the cheese is wonderfully gooey.
  • Carefully remove the tacos from the skillet. Garnish with the last sliced green onion sprig and serve immediately for a delicious, easy, and healthy meal!
