Ingredients
  

Hummus Base

  • 7.5 oz roasted sweet red peppers drained
  • 15 oz garbanzo beans or chickpeas rinsed and drained
  • 1 clove garlic halved
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp tahini
  • 0.5 tsp salt

Assembly

  • 2 packages frozen miniature phyllo tart shells 1.9 oz each
  • 30 pitted ripe olives

Instructions
 

  • Cut one roasted pepper into 30 thin strips and set aside. Put the remaining peppers in a food processor. Add the chickpeas and garlic, then pulse until coarsely chopped.
  • Add lemon juice, olive oil, tahini, and salt; process until smooth and creamy.
  • Spoon the hummus into a piping bag (or a zip-top bag with a small corner snipped). Pipe a small amount into each phyllo shell.
  • Take one red pepper strip and stuff it into an olive so it looks like a creepy little creature, then press the olive gently onto the filled shell. Repeat for all 30 shells. Serve immediately or chill until party time.
