Ingredients
  

Sloppy Joe Mixture

  • 1 pound lean ground beef
  • 1 can Manwich Sloppy Joe sauce (15-ounce), check for varieties free of artificial flavors and preservatives for a healthier choice!

Cornbread Mixture

  • 2 boxes corn muffin mix (8.5-ounce)
  • 1 large egg
  • 1/3 cup milk (use skim or low-fat for a lighter option)

Toppings

  • 1 cup shredded cheddar cheese (low-fat option available)
  • 1/2 cup light sour cream
  • 1/2 cup sliced green onions

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures everything cooks evenly.
  • In a large skillet, brown your lean ground beef. Once it's fully cooked, carefully drain any excess grease to keep it light.
  • Stir in the entire can of Manwich Sloppy Joe sauce with the cooked beef. Give it a good mix and then set this delicious filling aside.
  • Follow the package directions for your corn muffin mix. This usually involves combining the mix with the egg and milk.
  • Spoon about 2 heaping tablespoons of the prepared corn muffin batter into each well of a standard muffin pan. This forms the base of your cups.
  • Now, take your sloppy joe mixture and evenly divide it among the muffin wells, placing it right on top of the cornbread batter.
  • Pop the muffin pan into your preheated oven and bake for about 20 minutes, or until the cornbread edges turn a lovely golden brown.
  • Once baked, remove the cups from the oven and immediately top each one with a sprinkle of shredded cheddar cheese, a dollop of light sour cream, and some fresh green onions.
