Instructions
Rinse and dry each chicken thigh thoroughly.
Sprinkle the chicken with salt and pepper, then place in the slow cooker.
Add olive oil, tomato paste, garlic, onion, red bell pepper, mushrooms, diced tomatoes, rosemary, thyme, oregano, red pepper flakes, and chicken broth.
Cover and cook on low for 6-8 hours until the chicken is tender and easily falls off the bone.
Serve over cooked spaghetti noodles and top with fresh parsley.
