Instructions
In a large pan, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook for 4-5 minutes per side until golden brown. Transfer chicken to the slow cooker.
In the same pan, sauté mushrooms for 4-5 minutes until tender, then add garlic and cook for 30 seconds.
Combine mushroom mixture, onion, bell peppers, Italian seasoning, and marinara sauce in the slow cooker. Gently mix all ingredients.
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
Stir in olives, sprinkle with parsley, and serve.
