Ingredients
  

  • 6 pieces bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 ounces sliced mushrooms
  • 1.5 teaspoons minced garlic
  • 0.5 cup thinly sliced onion
  • 1 piece green bell pepper, cut into 1/2 inch pieces
  • 1 piece red bell pepper, cut into 1/2 inch pieces
  • 0.5 teaspoon Italian seasoning
  • 1 jar marinara sauce (24-ounce)
  • 0.5 cup pitted kalamata olives
  • 2 tablespoons chopped parsley

Instructions
 

  • In a large pan, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook for 4-5 minutes per side until golden brown. Transfer chicken to the slow cooker.
  • In the same pan, sauté mushrooms for 4-5 minutes until tender, then add garlic and cook for 30 seconds.
  • Combine mushroom mixture, onion, bell peppers, Italian seasoning, and marinara sauce in the slow cooker. Gently mix all ingredients.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • Stir in olives, sprinkle with parsley, and serve.
