- 2 pounds boneless, skinless chicken thighs
- 5 cups low-sodium chicken broth
- 1 can fire-roasted tomatoes 15-ounce, undrained
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 orange bell pepper chopped
- 1 small red onion chopped
- 1 jalapeño pepper seeded and finely chopped (for mild heat)
- 4 ounces light cream cheese softened
- 3 cloves garlic minced
- 2 tablespoons fajita seasoning blend low sodium preferred
- 2 tablespoons fresh cilantro chopped
- 1 fresh lime juice of
- 2 teaspoons salt
Place the boneless, skinless chicken thighs at the bottom of your slow cooker. Sprinkle them evenly with the salt and half of your fajita seasoning.
Pour the can of fire-roasted tomatoes directly over the chicken. Gently add the chopped bell peppers, red onion, minced garlic, and jalapeño pepper. Finally, pour in the remaining fajita seasoning and chicken broth.
Cover and cook on HIGH for 3 hours, or on LOW for 6 hours, until the chicken is tender and cooked through. Carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot.
To ensure a smooth, creamy texture without clumps, scoop out about a cup of the hot broth into a blender or food processor. Add the softened cream cheese to the blender with the broth and blend until completely smooth. Pour this creamy mixture back into the slow cooker.
Stir everything well and continue cooking for another 30 minutes on HIGH (or 1 hour on LOW) to let the flavors meld and the soup thicken slightly. Just before serving, turn off the slow cooker and stir in the fresh chopped cilantro and lime juice. Enjoy your comforting, healthy soup!
