Ingredients
  

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 3 ounces baby spinach
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup sliced sun-dried tomatoes (packed in oil)
  • 1/2 cup chicken stock
  • 4 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon oil from the jar of sun-dried tomatoes
  • 2 teaspoons dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground pepper

Instructions
 

  • Gently warm the unsalted butter, the oil from the sun-dried tomatoes, and minced garlic in a saucepan over medium heat for about 20 seconds. Be careful not to let the garlic brown.
  • Pour in the chicken stock and rich heavy cream, then allow it to softly simmer for about 8 minutes until it begins to thicken beautifully.
  • Stir in the grated Parmesan cheese and continue simmering for another 3-5 minutes, letting the flavors meld into a creamy sauce.
  • Place the boneless, skinless chicken thighs directly into the insert of your slow cooker. Season them generously with dried basil, oregano, parsley, salt, and pepper.
  • Arrange the sliced sun-dried tomatoes evenly on top of the chicken.
  • Carefully pour the creamy Tuscan sauce over everything in the slow cooker. Cover and cook on high for 3 hours or on low for 6 hours, letting your slow cooker do all the hard work.
  • Once cooked, gently remove the tender chicken and set it aside. Stir in the fresh baby spinach into the warm sauce, cover, and let it wilt for a few minutes.
  • Serve the succulent chicken with the vibrant, creamy sauce spooned generously over the top. Enjoy your effortless and healthy meal!
