  • 1 pound ground Italian sausage
  • 8 Low carb tortillas street taco size
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 24 slices pepperoni
  • 1 teaspoon dried oregano

Instructions
 

  • Divide the ground Italian sausage into 8 equal pieces, about 2 ounces each, and roll them gently into balls.
  • Place one sausage ball on a piece of parchment paper. Carefully center a low-carb tortilla on top of the sausage ball.
  • Using a smash burger press or a spatula, firmly press down on the tortilla until the sausage flattens out and covers the entire tortilla. Repeat this simple process for all remaining sausage balls and tortillas.
  • Heat a large nonstick skillet over medium heat. Place the sausage-covered tortillas into the hot skillet, sausage-side down. Cook in batches if necessary, allowing about 3 at a time.
  • Cook until the sausage is beautifully browned and a bit crispy. Then, flip each taco base over and remove the skillet from the heat momentarily.
  • Spread about 1 tablespoon of pizza sauce evenly over the cooked sausage. Sprinkle with a good amount of mozzarella cheese and lay 3 pepperoni slices on top of each.
  • Return the skillet to the heat and cover it with a lid. Continue cooking until the tortilla is golden and crispy, and the cheese has melted into a gooey, delicious layer.
  • Finish with a tiny pinch of dried oregano. Serve immediately for a fun and flavorful meal!
