A fun and flavorful meal, these Smash Burger Pizza Tacos combine the best of both worlds – juicy Italian sausage, pizza toppings, all on a low-carb tortilla, perfect for a keto-friendly dinner.
Divide the ground Italian sausage into 8 equal pieces, about 2 ounces each, and roll them gently into balls.
Place one sausage ball on a piece of parchment paper. Carefully center a low-carb tortilla on top of the sausage ball.
Using a smash burger press or a spatula, firmly press down on the tortilla until the sausage flattens out and covers the entire tortilla. Repeat this simple process for all remaining sausage balls and tortillas.
Heat a large nonstick skillet over medium heat. Place the sausage-covered tortillas into the hot skillet, sausage-side down. Cook in batches if necessary, allowing about 3 at a time.
Cook until the sausage is beautifully browned and a bit crispy. Then, flip each taco base over and remove the skillet from the heat momentarily.
Spread about 1 tablespoon of pizza sauce evenly over the cooked sausage. Sprinkle with a good amount of mozzarella cheese and lay 3 pepperoni slices on top of each.
