S'mores Rice Krispies Treats

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 16 ounces mini marshmallows divided
  • 6 cups crispy rice cereal
  • 1 1/2 cups graham crackers broken into bite-sized pieces
  • 1 cup semisweet chocolate chips

Instructions
 

  • Prep your pan by lining a 9x13-inch baking dish with parchment paper for easy, mess-free removal.
  • Gently melt the butter in a large pot over low heat until it is fully liquefied.
  • Set aside 2 cups of the mini marshmallows to fold in later. Stir the remaining marshmallows into the melted butter, keeping the heat low, until the mixture is smooth and completely melted.
  • Remove the pot from the heat and stir in the vanilla extract and salt to bring out the natural flavors.
  • Fold in the crispy rice cereal, crunchy graham cracker pieces, chocolate chips, and the reserved mini marshmallows. Stir gently so the chocolate doesn't completely melt, creating delicious pockets of chocolate and marshmallow.
  • Lightly press the mixture into your prepared pan. Avoid packing it down too hard; keeping it loose ensures your treats stay soft, light, and airy.
  • Sprinkle your choice of toppings over the top and press them down very gently so they stick.
  • Let the treats set on the counter for 30 to 60 minutes, then slice into 12 even squares and enjoy!
