Equipment

  • Muffin top pan (or square brownie pan or standard muffin pan)
  • Big mixing bowl
  • Wire Rack

Ingredients

  • 8 ounces cream cheese softened
  • 3 tablespoons butter melted
  • 2.5 tablespoons avocado oil
  • 2.5 tablespoons whipping cream
  • 2 large eggs
  • 1 large egg white
  • 1.1875 cups unflavored whey protein powder or 1 cup plus 3 tablespoons
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon xanthan gum
  • 0.5 teaspoon garlic powder
  • 0.375 teaspoon salt or 1/4 plus 1/8 teaspoon
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon cream of tartar
  • Toasted sesame seeds for topping

Instructions

  • Start by preheating your oven to 325°F (160°C). Lightly grease a muffin top pan, square brownie pan, or even a standard muffin pan – whatever you have works well for these delicious rolls!
  • In a big mixing bowl, combine the softened cream cheese, melted butter, avocado oil, whipping cream, whole eggs, and egg white. Beat them together until everything is smooth and wonderfully blended.
  • In a separate bowl, whisk all your dry ingredients: the protein powder, baking powder, xanthan gum, garlic powder, salt, baking soda, and cream of tartar. Make sure to break up any little clumps with a fork so it's nice and smooth.
  • Gently add the whisked dry ingredients into your cream cheese mixture. Fold them together by hand just until they're combined – be careful not to overmix, as this keeps your rolls light and fluffy!
  • Spoon the batter into the prepared pan cavities, filling them almost to the top. If you're using a muffin top pan, you might bake them in batches. Don't forget to sprinkle some delicious toasted sesame seeds on top of each roll!
  • Bake for 25 to 35 minutes, or until the tops are beautifully golden brown and firm when you touch them. (Muffin top pans might bake quicker, so keep an eye out!) Let them cool in the pan for about 15 minutes before gently flipping them onto a wire rack to cool completely. Enjoy your homemade, healthy rolls!
