- 1 tablespoon olive oil
- 1.5 pounds turkey breast cutlets
- 0.5 teaspoon Kosher salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon garlic powder
- 1 teaspoon butter
- 1 clove garlic minced
- 1 cup chicken broth
- 0.33 cup heavy whipping cream
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh tarragon or ½ teaspoon dried tarragon
- extra salt and pepper to taste
Gently pound your turkey cutlets until they're about ½ inch thick. Season them generously all over with the Kosher salt, black pepper, and garlic powder for a burst of flavor.
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned turkey cutlets and sear for just 2-3 minutes on each side until they're beautifully golden brown. Remove the turkey from the pan and set it aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until it smells fragrant – be careful not to burn it!
Pour in the chicken broth, making sure to scrape up any tasty browned bits from the bottom of the pan – this adds incredible depth to your sauce! Stir in the heavy cream and Dijon mustard. Let this mixture gently simmer for about 10 minutes, stirring occasionally, until it begins to thicken into a luscious sauce. (If using dried tarragon, stir it in now.)
Return the seared turkey cutlets to the pan with the simmering sauce. Continue to cook for another 3-4 minutes, or until the turkey is fully cooked through and reaches an internal temperature of 165°F. Stir in the fresh tarragon (if using) and adjust the seasoning with extra salt and pepper to your liking. Serve this healthy, easy dinner immediately and savor every bite!
This healthy and easy recipe is perfect for a quick weeknight dinner. It’s also low-carb!
