- 2 pounds boneless, skinless chicken thighs
- 3 tablespoons taco seasoning
- Salt and freshly ground black pepper to taste
- 4 ounces cream cheese cut into chunks
- 1 cup salsa mild or hot, your choice
- 1/4 cup chicken broth
Nestle the chicken thighs at the bottom of your Instant Pot. Season them generously with taco seasoning, salt, and pepper.
Add the chunks of cream cheese, your favorite salsa, and the chicken broth right into the pot. Secure the lid, set the Instant Pot to High Pressure for 20 minutes. After cooking, let the pressure release naturally for 15 minutes to keep the chicken extra tender.
Carefully release any remaining pressure using the vent, then open the lid. Take out the cooked chicken and set it aside. Use an immersion blender directly in the pot to whip the sauce until it's wonderfully smooth and creamy. If you don't have an immersion blender, transfer the sauce to a regular blender.
Shred the tender chicken using two forks, then return it to the pot. Toss it with the creamy sauce until every piece is coated. Serve this delicious chicken in crisp lettuce wraps, topped with fresh avocado slices and a sprinkle of shredded cheddar cheese for a healthy and satisfying meal!
