Combine your whole wheat flour, yeast, salt, and brown sugar in a large mixer bowl. Set aside.
In a separate microwave-safe bowl, gently warm the cottage cheese, water, and oil until it's very warm (about 120-130°F).
Add the warm liquid mixture and the egg to your dry ingredients. Beat for 3 minutes on medium speed until well combined.
Stir in 1/2 cup of all-purpose flour and beat for 1 minute. Gradually add the remaining all-purpose flour until a soft, manageable dough forms.
Turn the dough out onto a lightly floured surface. Knead it for 6-8 minutes until it feels smooth and elastic. Cover the dough and let it rest for 10 minutes.
Roll the rested dough into a large rectangle, roughly 12 by 10 inches. Using a pizza cutter or knife, cut the dough into twelve 1-inch wide strips, each about 10 inches long.
Take one dough strip and carefully wrap it in a spiral fashion around each sausage, gently tucking the ends underneath to secure.
Place your wrapped sausages on a baking sheet lined with parchment paper or lightly greased. Cover them and let them rise for about 20 minutes until they look a bit puffy. (Don't worry, they won't double in size like traditional bread).
Preheat your oven to 350°F (175°C). Bake the spiral-wrapped sausages for 15-20 minutes, or until they're beautifully golden brown.
Once baked, remove them from the oven. Carefully insert a popsicle stick into one end of each sausage. Serve immediately with your homemade dipping sauce.
While the sausages bake, simply combine the yellow mustard and drained dill pickle relish in a small bowl. Stir well, and your zesty dip is ready!
