Spooky Color-Changing Margarita

A magical and spooky cocktail perfect for Halloween. This color-changing margarita uses purple cabbage-infused ice cubes that shift color when they meet the acidity of the margarita mixture.

Ingredients
  

Cabbage Ice Cubes

  • 2 cups sliced purple cabbage
  • 4 cups boiling water

Margarita Base

  • 8 oz blanco tequila
  • 4 oz triple sec
  • 3 oz freshly squeezed lime juice
  • 1 cup lemonade

Garnish

  • 4 lime wedges
  • 1/4 cup kosher or coarse sea salt for rim

Instructions
 

  • Put the sliced cabbage in a large heatproof bowl. Pour the boiling water over it and let it sit until the water turns a deep blue color, about 5 minutes. Strain out the cabbage and set the liquid aside to cool completely.
  • Once the cabbage water is at room temperature, pour it into ice cube trays. Freeze for 4 hours, or until the cubes are solid.
  • In a pitcher, stir together the tequila, triple sec, lime juice, and lemonade. Rub a lime wedge around the rims of your glasses, then dip the rims into the salt.
  • Drop a few of the purple ice cubes into each prepared glass. Pour the margarita mixture over the ice. Garnish each glass with a lime wedge and serve immediately.
