Cabbage Ice Cubes
- 2 cups purple cabbage sliced
- 4 cups water boiling
Margarita Base
- 8 oz blanco tequila
- 4 oz triple sec
- 3 oz lime juice freshly squeezed
- 1 cup lemonade
- 4 lime wedges for garnish
- 1/4 cup kosher salt for rimming
Place the sliced purple cabbage in a large heat-safe bowl. Pour the boiling water over it and let it sit until the water turns a deep blue color (about 5 minutes). Strain out the cabbage and let the blue liquid cool completely.
Once the cabbage water is no longer hot, pour it into ice cube trays. Freeze until solid, about 4 hours or overnight.
In a pitcher or large measuring cup, mix together the tequila, triple sec, lime juice, and lemonade. Lightly wet the rims of your glasses with a lime wedge, then dip them in the salt.
Drop a few purple cabbage ice cubes into each glass. Pour the margarita mixture over the ice. Watch as the drink magically shifts from a clear citrus color to a spooky pinkish-purple! Garnish with a lime wedge and serve immediately.
