1lbwhole wheat spaghetti
1 1/2cupslow-sodium marinara saucewarmed
1/2cupciliegine (small mozzarella balls)sliced into rounds
1/4cupblack olivessliced crosswise into rounds
Instructions
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
In a large bowl, combine the ground beef, onion, panko, garlic, parsley, and egg. Season generously with salt and pepper. Mix with a spatula or your hands until everything is well combined, then roll into 1-inch balls. Arrange them on the prepared baking sheet.
Bake the meatballs for 13 minutes. Then, press a mozzarella round and an olive slice on top of each meatball to create “eyeballs.” Return to the oven and bake until the cheese is melty, about 2 more minutes.
Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain and transfer to a serving platter.
Pour the warm marinara sauce over the spaghetti, then scatter the eyeball meatballs on top. Serve immediately.
