Spooky Eyeball Pasta

A fun and spooky Halloween-themed dinner featuring lean meatball 'eyeballs' over whole wheat spaghetti. Perfect for a festive family meal!

Ingredients
  

Meatballs

  • 1 lb lean ground beef (90% lean)
  • 1/2 medium onion finely chopped
  • 1/4 cup panko bread crumbs
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 large egg beaten
  • Kosher salt and freshly ground black pepper to taste

Pasta & Toppings

  • 1 lb whole wheat spaghetti
  • 1 1/2 cups low-sodium marinara sauce warmed
  • 1/2 cup ciliegine (small mozzarella balls) sliced into rounds
  • 1/4 cup black olives sliced crosswise into rounds

Instructions
 

  • Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
  • In a large bowl, combine the ground beef, onion, panko, garlic, parsley, and egg. Season generously with salt and pepper. Mix with a spatula or your hands until everything is well combined, then roll into 1-inch balls. Arrange them on the prepared baking sheet.
  • Bake the meatballs for 13 minutes. Then, press a mozzarella round and an olive slice on top of each meatball to create “eyeballs.” Return to the oven and bake until the cheese is melty, about 2 more minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain and transfer to a serving platter.
  • Pour the warm marinara sauce over the spaghetti, then scatter the eyeball meatballs on top. Serve immediately.
