Preheat oven to 325°F and line a baking sheet with parchment or silicone liner.
In a large bowl, beat the peanut butter and softened butter until creamy. Mix in the sweetener, then add the egg and vanilla – beat until smooth.
Stir in the almond flour, peanut flour, baking soda, and salt until a soft dough forms.
Roll dough into 1-inch balls and place 2 inches apart on the prepared sheet. Gently press each ball with your palm to about ½ inch thick.
Bake for 12–15 minutes until puffy and lightly golden. As soon as they come out, use the back of a rounded teaspoon to make a small well in the center of each cookie. Let cool completely.
For the filling: In a microwave-safe bowl, melt the chocolate chips and 2 tbsp peanut butter together in 30-second bursts, stirring until smooth.
Spoon a little of the melted chocolate into each cookie well. Refrigerate for about 30 minutes until the chocolate is firm.
