Ingredients
  

Cookie Base

  • 3/4 cup creamy natural peanut butter
  • 1/4 cup butter softened
  • 2/3 cup Swerve Brown sweetener
  • 1 egg large
  • 1/2 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup peanut flour or peanut butter powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Chocolate Center

  • 3 oz keto chocolate chips
  • 2 tbsp creamy natural peanut butter

Instructions
 

  • Preheat oven to 325°F and line a baking sheet with parchment or silicone liner.
  • In a large bowl, beat the peanut butter and softened butter until creamy. Mix in the sweetener, then add the egg and vanilla – beat until smooth.
  • Stir in the almond flour, peanut flour, baking soda, and salt until a soft dough forms.
  • Roll dough into 1-inch balls and place 2 inches apart on the prepared sheet. Gently press each ball with your palm to about ½ inch thick.
  • Bake for 12–15 minutes until puffy and lightly golden. As soon as they come out, use the back of a rounded teaspoon to make a small well in the center of each cookie. Let cool completely.
  • For the filling: In a microwave-safe bowl, melt the chocolate chips and 2 tbsp peanut butter together in 30-second bursts, stirring until smooth.
  • Spoon a little of the melted chocolate into each cookie well. Refrigerate for about 30 minutes until the chocolate is firm.
