Preheat your oven to 325°F. Line an 8-inch springform pan with parchment paper on the bottom and butter the sides.
Mix the almond flour, sweetener, and melted butter into a dough. Press it firmly into the pan to form the crust. Pop it in the fridge for 15–20 minutes to set.
While that chills, blend the cream cheese, powdered sweetener, sour cream, lemon zest, vanilla, and liquid sweetener. Add the eggs one at a time, then gently mix in the 2 tablespoons of almond flour.
Pour this creamy filling over the crust. Bake for 45 minutes, until the edges are golden and the center is just a little jiggly. Turn off the oven and let the tart cool inside with the door open for 20 minutes.
Take the tart out and let it cool completely on the counter.
For the sauce, simmer the strawberries, water, lemon juice, and sweetener in a small pan. Stir in the xanthan gum and cook for a few minutes until it thickens. Let it cool to room temperature.
Spoon the strawberry sauce over the cooled tart. Slice and serve cold for a perfectly spooky, healthy treat.
