Ingredients
  

For the Crust

  • 0.5 cup Almond Flour
  • 2 tbsp Low Carb Sugar Substitute
  • 2 tbsp Butter

For the Filling

  • 16 oz full-fat Cream Cheese
  • 0.5 cup powdered Low Carb Sugar Substitute
  • 0.33 cup Sour Cream
  • 2 large Eggs
  • 2 tbsp Almond Flour
  • 2 tsp Vanilla Extract
  • 1 tsp Lemon Zest
  • 0.25 tsp liquid Low Carb Sugar Substitute

For the Sauce

  • 1 cup fresh Strawberries (sliced)
  • 3 tbsp Water
  • 0.5 tbsp Lemon Juice
  • 1 tbsp Low Carb Sugar Substitute
  • 0.5 tsp Xanthan Gum

Instructions
 

  • Preheat your oven to 325°F. Line an 8-inch springform pan with parchment paper on the bottom and butter the sides.
  • Mix the almond flour, sweetener, and melted butter into a dough. Press it firmly into the pan to form the crust. Pop it in the fridge for 15–20 minutes to set.
  • While that chills, blend the cream cheese, powdered sweetener, sour cream, lemon zest, vanilla, and liquid sweetener. Add the eggs one at a time, then gently mix in the 2 tablespoons of almond flour.
  • Pour this creamy filling over the crust. Bake for 45 minutes, until the edges are golden and the center is just a little jiggly. Turn off the oven and let the tart cool inside with the door open for 20 minutes.
  • Take the tart out and let it cool completely on the counter.
  • For the sauce, simmer the strawberries, water, lemon juice, and sweetener in a small pan. Stir in the xanthan gum and cook for a few minutes until it thickens. Let it cool to room temperature.
  • Spoon the strawberry sauce over the cooled tart. Slice and serve cold for a perfectly spooky, healthy treat.
