Mix the crust: In a small bowl, combine the almond flour, monk fruit sweetener, salt, and melted butter. Stir until the butter is fully mixed in. Press 1 tablespoon of the mixture into the bottom of each mini cupcake tin. Pop the tray in the fridge or freezer to firm up while you make the filling.
Whip the cream: In a large bowl or stand mixer, beat the heavy whipping cream until stiff peaks form. Set aside.
Make the filling: In another large bowl, beat together the softened cream cheese, vanilla extract, sweetener, and collagen powder until light and fluffy. Gently fold in the whipped cream until no streaks remain.
Assemble the ghosts: Take the crusts out of the fridge. Use a piping bag to pipe the cream cheese mixture onto each crust, shaping it into a little ghost. Press two sugar-free chocolate chips on each for eyes.
Set and serve: Place the tray in the freezer for 1-2 hours, until the bites are firm. Keep frozen until you're ready to serve.
