Spooky Skull Deviled Eggs

Ingredients
  

  • 12 hard-boiled large eggs
  • 1/4 cup mayonnaise
  • 1/4 cup roasted sweet red pepper strips finely chopped
  • 2 tsp Dijon mustard
  • 2 tsp cider vinegar
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup finely crushed corn chips plus optional whole chips for garnish

Instructions
 

  • Peel the hard-boiled eggs and slice them in half lengthwise. Gently pop out the yolks and set the whites aside.
  • In a small bowl, mash the yolks with a fork until crumbly. Stir in the mayonnaise, chopped red peppers, Dijon mustard, cider vinegar, paprika, salt, and pepper until smooth and creamy.
  • To make the skull faces, take a small straw (for the eyes) and a larger straw (for the mouth and nose) and press them into the flat side of each egg white to create holes. Be gentle so the white doesn't crack.
  • Spoon or pipe the yolk mixture into the hollowed egg whites, being careful not to overfill.
  • Spread the crushed corn chips on a shallow plate. Gently dip the yolk side of each filled egg into the chips so they stick.
  • Place the eggs on a serving platter, cover, and chill in the fridge until you're ready to serve. Add whole corn chips around the plate if you like.
