Spooky Stuffed Jack-o'-Lantern Peppers

Ingredients
  

Zucchini Noodles

  • 4 medium zucchinis spiralized

Jack-o'-Lantern Peppers

  • 4 bell peppers any color, carved

Sauce

  • 1 large hot house tomato
  • 1/2 cup sun-dried tomatoes soaked in hot water for 10 minutes
  • 1/2 red bell pepper
  • 1/4 red onion
  • 1/4 cup fresh basil leaves
  • 2 tbsp sunflower seeds soaked for 2 hours
  • 2 tsp extra-virgin olive oil
  • 1.5 tsp gluten-free soy sauce
  • 1.5 tsp balsamic vinegar
  • 1 clove garlic
  • 1 Medjool date pitted
  • 1/4 tsp sea salt
  • black pepper to taste

Instructions
 

  • Spiralize your zucchinis into noodles and set them aside.
  • To carve the peppers, cut a round opening at the top. Scoop out all seeds and membranes. Carefully cut a jack-o'-lantern face into each pepper using a small pumpkin-carving tool.
  • For the sauce, add all sauce ingredients to a food processor. Blend for 1 minute until completely smooth.
  • Toss the zucchini noodles with the raw red sauce in a large bowl until well coated.
  • Stuff each carved pepper with the sauced noodles. Pull a few noodle strands through the mouth or eyes for a spooky effect.
  • Serve immediately and enjoy your creepy, healthy creation!
