These crispy, low-carb cheese crackers are perfect for a Fourth of July celebration! Made with almond flour and your favorite shredded cheese, they're a healthy and delicious snack.
6ozshredded cheese (Cheddar, Pepper Jack, or Monterey Jack)
1 1/2cupsfine almond flourplus a little extra for dusting
1/2tspsea salt
1/2tspgarlic powder
1/4tspred pepper flakesoptional
1large egg
1tbspmelted butterfor brushing
coarse sea saltfor final sprinkle
Instructions
Preheat your oven to 300°F (150°C). Lay out a large silicone baking mat on your counter and dust it lightly with a bit of almond flour.
Microwave the shredded cheese in a big microwave-safe bowl on high in 30-second bursts, stirring after each, until completely melted and smooth.
Add the almond flour, sea salt, garlic powder, optional red pepper flakes, and egg to the melted cheese. Stir with a sturdy spatula, working the dough against the sides of the bowl until smooth. If sticky, knead in extra almond flour a tablespoon at a time.
Place the dough onto the prepared silicone mat, cover with parchment or waxed paper, and roll out as thinly as possible (about 1/8 inch thick).
Use a pizza wheel or sharp knife to cut the dough into 1-inch squares or desired shapes. Optionally poke a small hole in the center of each with a straw or prick with a fork.
Lightly brush the tops with melted butter, then sprinkle with coarse sea salt, pressing gently to adhere.
Slide the silicone mat onto a large baking sheet. Bake for 20 to 30 minutes until golden brown and edges crisp. For extra crunch, turn off the oven and let them sit inside until firm.
