  • 1/2 cup heavy cream
  • 1/4 cup plus 2 tablespoons powdered sweetener (keto-friendly option recommended)
  • 1/4 teaspoon vanilla extract

Strawberry Mixture & Serving

  • 1/2 cup diced strawberries
  • 4 low-carb crepes (for serving)

Instructions
 

  • In a large mixing bowl, combine the softened cream cheese, heavy cream, ¼ cup of the powdered sweetener, and vanilla extract. Use an electric mixer to beat until the mixture is beautifully smooth and fluffy.
  • In a separate small bowl, gently toss the diced strawberries with the remaining 2 tablespoons of powdered sweetener.
  • Allow the strawberry mixture to sit for about 10 minutes. This step, called macerating, helps the sweetener draw out the natural juices from the strawberries, creating a light, delicious sauce.
  • Once the strawberries have macerated, carefully fold ¼ of this mixture into your fluffy cream cheese blend. This will be the luscious filling for your crepes.
  • Take each crepe and spoon ¼ of the creamy filling inside. Then, drizzle the remaining strawberry sauce over the top. Serve immediately and savor every delightful bite!
