Instructions
In a small bowl, combine the diced strawberries with the optional sugar (or your chosen sweetener). Gently mash a few strawberries to help release their sweet juices, but leave most of them in small chunks for a delightful texture.
Allow the strawberry mixture to sit for about 10-15 minutes. This step helps the natural juices form and intensifies the strawberry flavor.
Evenly spoon the strawberry mixture into the bottom of your popsicle molds, dividing it among all the cavities.
Carefully pour the light lemonade over the strawberry mixture in each mold, making sure to leave a small space at the very top to allow for expansion as the popsicles freeze.
Gently place popsicle sticks into each mold. If you'd like the strawberries to be more evenly distributed throughout the popsicle, give each mold a gentle stir during the first hour of freezing. Otherwise, they'll naturally settle towards the bottom, creating a sweet surprise at the end!
Freeze the popsicles for at least 4-6 hours, or until they are completely solid. Once frozen, they're ready to be enjoyed as a refreshing, healthy summer treat!
