Stuffed French Toast

Ingredients
  

  • 8 slices sturdy bread (brioche or challah)
  • 1 cup plain Greek yogurt (or flavored)
  • 1 cup fresh berries (strawberries, blueberries, raspberries, or a mix)
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp cinnamon
  • 2 tbsp sugar
  • 2 tbsp butter (for greasing the pan)
  • powdered sugar (for dusting)

Instructions
 

  • Flatten each slice of bread using a rolling pin until thin.
  • Spread a layer of Greek yogurt on each slice.
  • Top with a few berries on the yogurt.
  • Roll each slice tightly with the filling inside.
  • In a shallow dish, whisk eggs, milk, cinnamon, and sugar together.
  • Dip each roll into the egg mixture, coating fully.
  • Heat a skillet over medium-high and add butter or cooking spray.
  • Cook the rolls in the skillet until browned on all sides, about 2-3 minutes per side.
  • Remove from skillet and place on a serving plate.
  • Dust with powdered sugar before serving.
  • Serve warm, with extra berries or maple syrup if desired.

Notes

Feel free to use any combination of berries you like!
