Soup Ingredients
- 1 1/2 pounds lean ground beef (like 85% grass-fed for best flavor and health)
- 4 cups rich beef broth
- 3 colorful bell peppers (red, yellow, and orange for a vibrant mix), diced
- 28 ounces canned diced tomatoes (undrained)
- 15 ounce can low-carb tomato sauce
- 12 ounces frozen cauliflower rice
- 1/2 yellow onion diced
- 4 cloves garlic minced
- 2 tablespoons fresh parsley chopped
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon dried basil
- 1 teaspoon salt (divided)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper (divided)
Warm up a large pot or Dutch oven over medium heat. Add your lean ground beef along with half of the salt and pepper.
Cook the ground beef until it's nicely browned, then carefully remove it from the pot and set it aside for later.
Into the same pot, add the olive oil and butter. Once melted, toss in the diced onion and colorful bell peppers with the rest of the salt and pepper. Sauté them gently for a few minutes until they begin to soften and get a slight hint of color.
Stir in the minced garlic and cook for just 15 seconds until fragrant. Now, pour in the diced tomatoes, dried thyme, low-carb tomato sauce, tomato paste, the browned ground beef, and the beef broth. Let it gently simmer uncovered for 15 minutes. After that, stir in the frozen cauliflower rice and continue cooking for 5 more minutes.
