Ingredients
  

  • 16 ounces full-fat cream cheese cold (2 blocks)
  • 0.75 cup heavy cream cold
  • 6 tablespoons powdered erythritol
  • 0.25 teaspoon stevia powder (or monk fruit powder)
  • 1 vanilla bean (or 1 teaspoon vanilla extract)

  • This frosting is incredibly simple to make and always turns out perfectly creamy and delicious! For the best results, always start with cold ingredients and even chill your mixing bowl and beaters beforehand.
  • Prepare Vanilla (if using a bean): If you're using a vanilla bean, carefully make a small incision down its length. Then, use the back of a knife or a spoon to scrape out all the tiny, fragrant seeds. Set them aside. (If using vanilla extract, simply measure it out later).
  • Soften Cream Cheese: Take your cold cream cheese directly from the refrigerator and place it into a mixing bowl. Using an electric mixer, whip the cream cheese for just 20-30 seconds until it's slightly softened. Be careful not to overmix at this stage!
  • Add Sweetener: Incorporate the powdered erythritol into the softened cream cheese. Mix gently until it’s just combined.
  • Gradually Add Heavy Cream: Slowly pour in the cold heavy cream in 4-5 small batches. This helps prevent splatters and ensures a smooth, even mix.
  • Whip Until Thick: Continue beating the mixture with your electric mixer for several minutes. Watch as the frosting magically thickens up and becomes wonderfully fluffy.
  • Finish with Flavor: Once the frosting has reached your desired thick consistency, stir in the stevia powder (or monk fruit) and your prepared vanilla. Mix until all ingredients are well combined and the frosting is fragrant.
  • Serve or Store: Your amazing, sugar-free cream cheese frosting is now ready to enjoy! You can pipe it onto your favorite low-carb desserts, spread it with a knife, or store it in an airtight container in the fridge for later use.
