Ingredients
  

Crust

  • 1.5 cups almond flour
  • 0.5 cup pecan flour
  • 2 tbsp powdered monk fruit sweetener
  • 0.33 cup melted unsalted butter

Cream Cheese Layer

  • 8 oz softened cream cheese
  • 0.25 cup heavy cream
  • 0.25 cup powdered monk fruit sweetener
  • 0.5 tsp vanilla extract

Chocolate Layer (Optional)

  • 1 cup sugar-free dark chocolate (optional pudding layer)
  • 1 cup unsweetened almond milk (optional pudding layer)
  • 0.33 cup Dutch cocoa powder (alternative chocolate layer)
  • xanthan gum if using, for chocolate layer

Whipped Topping

  • 1.5 cups heavy cream
  • 2 tbsp powdered monk fruit sweetener
  • 0.5 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F. Line a 9x9-inch dish with parchment.
  • Mix almond flour, pecan flour, and sweetener; add melted butter until crumbly.
  • Press into dish and bake 12-15 minutes until golden. Cool.
  • Beat heavy cream, vanilla, and sweetener until stiff peaks form; fold in softened cream cheese. Spread over cooled crust.
  • For chocolate layer, heat heavy cream, almond milk, and chocolate or cocoa powder; whisk in xanthan gum if using, then cool slightly and pour over cream cheese layer.
  • Cover and refrigerate at least 2 hours.
  • For whipped topping, beat heavy cream, sweetener, and vanilla until stiff; spread over chocolate layer and garnish with chocolate shavings.
  • Chill 1-2 hours before serving.
