Mix almond flour, pecan flour, and sweetener; add melted butter until crumbly.
Press into dish and bake 12-15 minutes until golden. Cool.
Beat heavy cream, vanilla, and sweetener until stiff peaks form; fold in softened cream cheese. Spread over cooled crust.
For chocolate layer, heat heavy cream, almond milk, and chocolate or cocoa powder; whisk in xanthan gum if using, then cool slightly and pour over cream cheese layer.
Cover and refrigerate at least 2 hours.
For whipped topping, beat heavy cream, sweetener, and vanilla until stiff; spread over chocolate layer and garnish with chocolate shavings.
Chill 1-2 hours before serving.
