Dark Chocolate Layer
- 4 ounces sugar-free dark chocolate chips
- 0.75 ounce cocoa butter
- 0.5 teaspoon oil-based peppermint extract
White Chocolate Layer
- 4 ounces sugar-free white chocolate chips
- 0.75 ounce cocoa butter
- 0.5 teaspoon oil-based peppermint extract
- 2 sugar-free peppermint candies crushed (optional, for garnish)
Combine dark chocolate chips and cocoa butter in a heatproof bowl over simmering water (double boiler). Stir until melted and smooth.
Stir in peppermint extract.
Pour melted dark chocolate into silicone molds or an 8x8-inch pan lined with parchment paper and spread evenly.
Freeze for about 30 minutes until firm.
Melt white chocolate chips with cocoa butter over a double boiler, stirring until smooth.
Stir in peppermint extract.
Pour white chocolate over the set dark chocolate layer and spread evenly.
Sprinkle crushed peppermint candies if desired and refrigerate until firm.
Break into pieces or remove from molds. Store in a covered container in the refrigerator.
