Ingredients
  

Dark Chocolate Layer

  • 4 ounces sugar-free dark chocolate chips
  • 0.75 ounce cocoa butter
  • 0.5 teaspoon oil-based peppermint extract

White Chocolate Layer

  • 4 ounces sugar-free white chocolate chips
  • 0.75 ounce cocoa butter
  • 0.5 teaspoon oil-based peppermint extract
  • 2 sugar-free peppermint candies crushed (optional, for garnish)

Instructions
 

  • Combine dark chocolate chips and cocoa butter in a heatproof bowl over simmering water (double boiler). Stir until melted and smooth.
  • Stir in peppermint extract.
  • Pour melted dark chocolate into silicone molds or an 8x8-inch pan lined with parchment paper and spread evenly.
  • Freeze for about 30 minutes until firm.
  • Melt white chocolate chips with cocoa butter over a double boiler, stirring until smooth.
  • Stir in peppermint extract.
  • Pour white chocolate over the set dark chocolate layer and spread evenly.
  • Sprinkle crushed peppermint candies if desired and refrigerate until firm.
  • Break into pieces or remove from molds. Store in a covered container in the refrigerator.

Notes

Store your sugar-free peppermint bark in a covered container in the fridge for several weeks.
