- 15 large Medjool dates pitted
- 0.33 cup creamy peanut butter (for a high-protein option, blend 1/4 cup peanut butter powder, 1 scoop peanut butter protein powder, and 1/3 cup unsweetened almond milk)
- 0.75 cup white chocolate chips
- 1 tsp coconut oil
- 0.25 cup shredded coconut
Gently remove pits from the Medjool dates. Lay them cut-side down on a sheet of parchment paper. Cover with another piece of parchment and use a rolling pin to flatten them into a thin, sticky sheet. Make sure they're pressed together well!
Evenly spread your favorite creamy peanut butter over the flattened date layer. (If boosting protein, first blend 1/4 cup peanut butter powder, 1 scoop peanut butter protein, and 1/3 cup unsweetened almond milk until smooth, then spread.) Pop it into the freezer for 5 minutes to set while you get the chocolate ready.
In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 15-second bursts, stirring until completely smooth and melted. Gently pour this luscious white chocolate over the chilled peanut butter layer, spreading it evenly across the bark.
While the white chocolate is still soft, generously sprinkle the shredded coconut over the top for a delightful tropical crunch.
Transfer the bark to the freezer for about 20-30 minutes until it's perfectly firm and set.
