Ingredients
  

Chicken Mixture

  • 1 pound lean ground chicken (approx. 500g)
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 teaspoons Italian seasoning
  • Salt to taste
  • freshly ground black pepper to taste

Taco Assembly

  • 8 small flour tortillas
  • cup marinara sauce
  • 8 slices mozzarella cheese
  • 6 large fresh basil leaves
  • 4 cups fresh arugula
  • ½ cup freshly grated Parmesan cheese
  • cooking oil for skillet

Instructions
 

  • In a bowl, gently mix the ground chicken with garlic powder, oregano, Italian seasoning, salt, and pepper until just combined. Be careful not to overmix!
  • Take each small flour tortilla and spread a thin, even layer of the seasoned chicken mixture onto one side. Press down firmly to ensure the chicken sticks well to the tortilla.
  • Heat a large non-stick skillet over medium-high heat with a light drizzle of your preferred cooking oil. Place the tortillas chicken-side down into the hot skillet. Cook for about 2-3 minutes, until the chicken is beautifully golden brown and fully cooked through.
  • Carefully flip each taco. Spoon a small amount of marinara sauce over the cooked chicken, then top with a slice of mozzarella cheese. Cover the pan with a lid to help the cheese melt quickly and become bubbly, while the tortilla underneath crisps up (this usually takes 1-2 minutes).
  • Once the cheese is melted and bubbly, remove the delicious tacos from the skillet.
  • Finish each taco with a few fresh basil leaves, a generous handful of peppery arugula, and a final sprinkle of freshly grated Parmesan cheese.
  • Fold your taco in half, take a delightful bite, and enjoy this easy, healthy, and fresh summer meal!
