Ingredients
  

  • 200 g liquid egg whites
  • 1/4 tsp lemon juice
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/4 cup monk fruit sweetener (or your preferred sugar-free sweetener)
  • 1/2 tsp baking powder
  • 1 tbsp unsweetened almond milk
  • 1 tsp vanilla extract
  • 2/3 cup dark chocolate chips (optional, but highly recommended for deliciousness!)
  • Pinch of salt
  • Flaky sea salt (optional, for garnish)

Instructions
 

  • First, preheat your oven to 350°F (175°C). Then, grab an 8x8 inch square baking pan and line it with parchment paper, making sure some hangs over the sides for easy lifting later.
  • In a large mixing bowl, get your whisk (or mixer!) ready and beat the egg whites until they form stiff, fluffy peaks. Now, gently add the lemon juice and whisk for just a few more seconds to make sure they're super stable.
  • In a separate bowl, whisk together the cocoa powder, chocolate protein powder, monk fruit sweetener, baking powder, and that little pinch of salt until everything is perfectly combined and lump-free.
  • Carefully add about half of your dry ingredient mix into the whipped egg whites. Use a spatula to gently fold it in, making sure not to deflate those beautiful egg whites. Once mostly combined, fold in the remaining dry mixture until just incorporated.
  • Next, gently fold in the almond milk and vanilla extract. After that, carefully fold in about half of the dark chocolate chips if you're using them.
  • Pour your brownie batter evenly into the prepared baking pan. Then, sprinkle the rest of the chocolate chips over the top for extra melty goodness.
  • Place the pan in your preheated oven and bake for 21-26 minutes. You'll know they're ready when the brownies look set, and a toothpick inserted into the center comes out mostly clean.
  • Take the brownies out of the oven and let them cool completely in the pan. This step is key for them to firm up nicely. If you like, sprinkle a little flaky sea salt on top before slicing and enjoying your healthy, summery treat!
