Ingredients
  

  • 2 large sweet potatoes peeled and cubed
  • 1 tablespoon avocado oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound lean ground beef
  • 1 package taco seasoning
  • 2-3 teaspoons water
  • 1 cup canned corn drained
  • 1 cup plain cottage cheese blended
  • 1.5 tablespoons fresh lime juice
  • 1 small jalapeño finely diced
  • 0.25 cup fresh cilantro chopped
  • 1 avocado sliced
  • 1 teaspoon Tajín
  • 2 tablespoons hot honey

Instructions
 

  • Get Roasting! Preheat your oven to 400°F (200°C). On a baking sheet lined with parchment paper, toss your cubed sweet potatoes with avocado oil, salt, and pepper. Spread them out in a single layer. Roast for 25-35 minutes, flipping them halfway through, until they're tender and a little golden brown.
  • Sizzle the Beef! While the sweet potatoes roast, heat a skillet over medium heat. Add the lean ground beef and cook for 6-8 minutes, breaking it up with a spatula, until it's browned and no longer pink. Drain any extra grease for a healthier meal. Stir in the taco seasoning and a couple of teaspoons of water, then let it simmer for 2-3 minutes until the sauce thickens.
  • Whip Up the Salsa! In a medium bowl, combine the drained corn, creamy blended cottage cheese, fresh lime juice, finely diced jalapeños, chopped cilantro, and sliced avocado. Stir everything together until it's wonderfully creamy and well mixed. Give it a taste and add a little more lime or salt if you like.
  • Assemble Your Bowl! Divide the warm roasted sweet potatoes evenly among your serving bowls. Pile on the seasoned taco beef, then add a generous scoop of your fresh, vibrant street corn salsa on top.
