  • 0.5 cup certified gluten-free quick oats
  • 1 tsp chia seeds
  • 0.5 scoop vanilla protein powder
  • 0.25 tsp ground cinnamon

Liquids & Sweetness

  • 0.5 cup unsweetened almond milk
  • 1 tbsp maple syrup or honey

Peaches

  • 0.5 ripe peach diced

Topping

  • 1 tbsp crushed pecans for topping

Instructions
 

  • Combine your gluten-free quick oats, chia seeds, vanilla protein powder, and a light sprinkle of ground cinnamon in a small jar or bowl. Give them a quick stir to make sure they're all mixed together evenly.
  • Now, pour in the unsweetened almond milk and the maple syrup (or honey). Stir everything thoroughly until all the dry ingredients are fully incorporated into the liquid, creating a smooth base.
  • Gently add the diced fresh peach to the mixture. Give it a final gentle stir to ensure the peach pieces are nicely distributed throughout the oat mixture.
  • Cover your jar or bowl tightly and place it in the refrigerator. Let it chill for at least 4 hours, or even better, leave it overnight. This is the magic step where the oats and chia seeds soak up all the delicious flavors and transform into a wonderfully thick and creamy texture.
  • In the morning, pull your delightful overnight oats from the fridge. Sprinkle the crushed pecans over the top for a fantastic, crunchy texture. If you like, you can also add a few extra fresh peach slices for garnish!
