Kataifi Layer

  • 6 Tbsp unsalted butter
  • 10 oz kataifi pastry gently chopped into 1/2-inch pieces (about 5 cups)
  • 3 Tbsp tahini
  • 1.5 cups luscious pistachio cream from two 7-oz. jars, divided

Ganache Layer

  • 2 cups quality milk chocolate chips (340 g.)
  • 0.5 cup heavy cream

Garnish

  • Crushed pistachios for a vibrant garnish (optional)

Instructions
 

  • 1. Prepare Your Pan: Gently preheat your oven to 325°F (160°C). Lightly spray a 9x9-inch baking dish with cooking spray, then line it with parchment paper, leaving a helpful overhang on two opposite sides for easy lifting.
  • 2. Mix Brownie Batter: In a spacious bowl, prepare your chosen brownie mix following the package directions. Pour the smooth batter into your prepared dish and spread evenly.
  • 3. Bake to Fudgy Perfection: Bake the brownies for 35 to 40 minutes, or until a thin skewer inserted into the center comes out with just a few moist crumbs attached. Let them cool completely – patience is key for the best texture!
  • 4. Crisp the Kataifi: While the brownies cool, melt the butter in a large skillet over medium-low heat. Add the chopped kataifi and cook, stirring frequently and adjusting heat as needed, until it turns a beautiful deep golden color, about 15 to 18 minutes.
  • 5. Fold in the Flavorful Layers: Remove the kataifi from heat. Gently fold in the tahini and 1 1/4 cups plus 2 Tbsp. of the pistachio cream until well combined. Allow this delightful mixture to cool completely before spreading it evenly over your cooled brownies.
  • 6. Create Silky Ganache: Place the chocolate chips in a medium heatproof bowl. In a small pot, gently heat the heavy cream over medium heat until small bubbles just begin to form around the edges. Pour the warm cream over the chocolate chips, let it sit undisturbed for 2 minutes to melt, then whisk until beautifully smooth and glossy.
  • 7. Layer and Swirl Artfully: Pour the luscious chocolate ganache over the kataifi layer. Using a spoon, artfully drizzle the remaining 2 Tbsp. of pistachio cream on top. Take a toothpick and gently create elegant swirls, being careful not to disturb the kataifi underneath. Finish with a sprinkle of crushed pistachios for an extra touch of color and crunch.
