Ingredients
  

Chicken Coating Mix

  • 0.75 cup gluten-free breadcrumbs
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper

Chicken Breading Station

  • 1 pound boneless, skinless chicken breasts approx. 2 large, cut into tenders
  • 0.33 cup gluten-free flour
  • 2 large eggs for chicken

For Air Frying

  • Olive oil cooking spray

Waffles

  • 1.5 cups protein waffle mix
  • 2 large eggs for waffles
  • 1 cup water

For Serving

  • Maple syrup for serving

Instructions
 

  • Combine the gluten-free breadcrumbs, paprika, garlic powder, oregano, salt, and black pepper in a shallow dish.
  • Prepare two more bowls: one with â…“ cup gluten-free flour and another with 2 whisked eggs (for egg wash).
  • Coat each chicken tender by first dipping it in the gluten-free flour, then in the egg wash, and finally pressing it firmly into the breadcrumb mixture until fully covered.
  • Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  • Lightly spray the air fryer basket with olive oil spray. Place the coated chicken tenders in a single layer, ensuring they are not overcrowded. Spray the tops of the tenders for extra crispiness. Cook for 10-12 minutes, flipping halfway through, until golden, crispy, and cooked to an internal temperature of 165°F.
  • While the chicken cooks, preheat your waffle maker and spray it with non-stick spray. In a mixing bowl, combine the protein waffle mix, 2 eggs, and 1 cup water. Stir until just combined (a few lumps are okay).
  • Pour the waffle batter onto the preheated waffle maker, leaving about an inch from the edge. Cook for 5-6 minutes, or until golden brown and fluffy.
  • Arrange the hot, crispy air-fried chicken tenders alongside the fresh protein waffles. Drizzle generously with maple syrup and enjoy!
