  • Preheat your oven to a cozy 350°F (175°C). Lightly grease a 9x5-inch loaf pan to prevent sticking, and set it aside.
  • In a large mixing bowl, gently whisk together the flour, baking powder, baking soda, salt, and cinnamon. Make sure they're all nicely combined for an even bake!
  • In a separate bowl, combine the granulated sugar, brown sugar, melted coconut oil, mashed bananas, grated zucchini, eggs, and vanilla extract. Stir everything until it's smooth and beautifully blended.
