  • 1 tbsp maple syrup
  • 1 large egg
  • 0.5 cup unsweetened almond milk
  • 0.5 tsp vanilla extract

Creamy Lemon Glaze

  • 0.25 cup plain Greek yogurt
  • 1 tbsp cream cheese softened
  • 1 tbsp powdered sugar
  • 0.5 tsp lemon juice (optional, for extra tang)

  • Begin by preheating your oven to 350°F (175°C). Lightly grease a small oven-safe baking dish with a bit of cooking spray or softened butter.
  • In a blender, pulse your quick oats until they become a fine powder. Next, add all the other ingredients for the oats: baking powder, vanilla protein powder, lemon zest, fresh mixed berries, maple syrup, egg, almond milk, and vanilla extract. Blend until everything is just combined and the berries are slightly incorporated.
  • Pour this bright oat mixture into your prepared baking dish. Pop it into the preheated oven and bake for about 20-25 minutes, or until the top looks golden and set.
  • While your oats are baking, it's time to whip up the dreamy lemon glaze! In a small bowl, combine the plain Greek yogurt, softened cream cheese, powdered sugar, and a touch of lemon juice if you like extra zing. Whisk until smooth and creamy.
