  • 0.5 large yellow onion finely chopped
  • 3 cups bok choy chopped
  • 15-20 frozen dumplings (chicken, veggie, pork, or shrimp)
  • 0.25 cup fresh cilantro chopped
  • 1 tablespoon sesame seeds (toasted, optional)
  • Chili onion crisp (for serving, adjust to taste)

Instructions
 

  • Preheat your oven to 375°F (190°C) while you gather your simple ingredients. Grab a 9x9-inch baking dish for this one-pan wonder.
  • In your baking dish, combine the light coconut milk, fragrant red curry paste, minced garlic, low-sodium soy sauce, fish sauce (if using), and nutty sesame oil. Whisk everything thoroughly until the curry paste is fully blended, creating a vibrant and healthy broth.
  • Gently stir the finely chopped yellow onion and fresh bok choy into the curry mixture. Make sure they are spread evenly across the bottom of the dish, ready to soak up all the delicious flavors.
  • Carefully place your frozen dumplings (pinched-side down) into the dish. Spoon a little of the flavorful broth over each dumpling to lightly coat the tops, ensuring they cook perfectly and absorb the goodness.
  • Cover the baking dish tightly with a lid or aluminum foil. Bake for 15-20 minutes, or until the dumplings are tender and fully cooked through. The steam trapped inside will help them get wonderfully soft without drying out!
