Ingredients
  

  • 2 large eggs
  • 1/2 cup full-fat cottage cheese
  • Pinch sea salt
  • Pinch black pepper

Instructions
 

  • First, crack your eggs into a medium bowl and whisk them well until the yolks and whites are completely combined and smooth.
  • Next, gently fold in the cottage cheese, then season with a pinch of sea salt and black pepper to taste.
  • Warm a nonstick skillet over medium-low heat. Lightly coat the pan with cooking spray or a tiny dab of butter.
  • Pour the egg mixture into the warm skillet. As the eggs begin to set, gently push and fold them with a rubber spatula, creating soft curds.
  • Continue cooking for just a few minutes until the eggs are softly scrambled and no longer runny. Remove from heat immediately and serve your creamy, healthy scramble right away!
