Ingredients
  

  • 1 cup whole wheat or gluten-free pancake mix
  • 0.5 cup mashed ripe banana (about 1 medium)
  • 1 large egg
  • 0.5 cup unsweetened almond milk
  • 1 tbsp light olive oil
  • 1 tsp fresh lemon zest
  • 1 tsp vanilla extract
  • 0.5 cup fresh mixed berries optional, for folding into batter or topping

Instructions
 

  • Preheat your waffle iron according to its instructions.
  • In a large bowl, whisk together the mashed banana, egg, almond milk, light olive oil, fresh lemon zest, and vanilla extract until everything is nicely combined.
  • Gently fold in the pancake mix to the wet ingredients. Stir just enough until combined; a few small lumps are perfectly fine! Do not overmix to keep your waffles light and fluffy.
  • Lightly coat your preheated waffle iron with a non-stick cooking spray or a touch of melted coconut oil to prevent sticking.
  • Pour the batter onto the center of your waffle iron, close the lid, and cook for about 2-4 minutes, or until your waffles are beautifully golden brown and crispy. Cooking time might vary based on your waffle maker.
  • Carefully take the cooked waffles off the iron and place them on a plate or a cooling rack. Keep them warm if you're making a batch.
  • Top your healthy waffles with fresh berries, a drizzle of pure maple syrup, or a dollop of plain Greek yogurt for an extra boost!

Notes

Feel free to fold in the optional ½ cup fresh mixed berries into the batter before cooking or use them as a topping.
