  • 1 scoop vanilla protein powder
  • 0.5 tsp ground cinnamon (for oats)
  • 0.33 cup unsweetened almond milk
  • 1 tsp baking powder
  • 0.25 tsp vanilla extract

For the Cinnamon Swirl:

  • 1 tsp coconut sugar (or light brown sugar)
  • 0.5 tsp ground cinnamon (for swirl)

For the Icing:

  • 1 tablespoon cream cheese softened
  • 1 tablespoon plain Greek yogurt
  • 1 tsp powdered sugar

Instructions
 

  • Start by grinding your oats in a high-speed blender until they become a fine flour-like consistency.
  • Next, add the mashed banana, maple syrup, vanilla protein powder, cinnamon, almond milk, baking powder, and vanilla extract to the blender. Blend everything together on high speed until smooth.
  • Pour this creamy oat mixture into a lightly greased, oven-safe dish.
  • In a small bowl, mix the coconut sugar and the additional cinnamon for the swirl. Spoon this mixture over the oat batter and use a knife or skewer to gently swirl it into circles.
  • Bake in a preheated oven at 350°F (175°C) for 22 to 25 minutes, or until set and lightly golden.
  • While the oatmeal bakes, whisk together the softened cream cheese, plain Greek yogurt, and powdered sugar for a simple, healthy icing.
