Ingredients
  

For the Zesty Crema

  • 0.5 cup Plain Greek Yogurt (or light sour cream)
  • 1 tablespoon Light Mayonnaise
  • 0.5 tablespoon Fresh Lime Juice
  • 1 teaspoon Minced Garlic (about 1 small clove)
  • 0.25 teaspoon Sea Salt
  • 0.25 cup Fresh Cilantro chopped (for crema)

For the Beef Filling

  • 0.5 medium Yellow Onion finely chopped
  • 1 pound Lean Ground Beef (90% lean or higher)
  • 1 package Low-Sodium Taco Seasoning Mix (about 1 ounce)
  • a splash of Water

For the Tacos & Garnish

  • 8 small Whole Wheat or Corn Tortillas (6-inch)
  • 1.5 cups Shredded Part-Skim Mozzarella Cheese
  • 1-2 tablespoons Avocado Oil (or other healthy cooking oil)
  • Extra Fresh Cilantro chopped (for garnish)

Instructions
 

  • First, let's make the vibrant crema! Combine the Greek yogurt, light mayonnaise, fresh lime juice, minced garlic, sea salt, and the ¼ cup chopped cilantro in a blender. Blend until super smooth and creamy. Pop it in the fridge to chill while you prepare the tacos.
  • Next, cook the beef filling. Heat a large skillet over medium heat. Sauté the finely chopped yellow onion until it softens, about 3-4 minutes. Add the lean ground beef and cook, breaking it apart with a spoon, until it's fully browned. Drain any excess fat from the skillet to keep it light and healthy.
  • Stir in the entire package of taco seasoning and a splash of water with the cooked beef. Let it simmer gently for a few minutes until the liquid is absorbed and the beef is perfectly coated and flavorful.
  • Now for assembly! Lay a tortilla flat on a clean surface. Sprinkle about 1 ½ tablespoons of shredded mozzarella on one half of the tortilla. Spoon a generous amount of the seasoned ground beef mixture over the cheese, then add a little more cheese on top. Carefully fold the tortilla in half to create a taco shape. Repeat with the remaining tortillas.
  • To get them perfectly crispy, add the folded tacos to the same skillet (or a clean one) over medium heat with a little avocado oil. Cook for 2-3 minutes on each side, pressing gently with a spatula, until they are golden brown and wonderfully crunchy. Add a tiny bit more oil if needed to achieve those perfectly crisp edges.
  • Serve these amazing crispy tacos immediately! Drizzle generously with the fresh cilantro lime crema and garnish with a sprinkle of extra chopped cilantro. Enjoy your healthy, delicious summer meal!
