  • 1 1/2 cups graham cracker crumbs for a healthier twist, use whole wheat graham crackers!
  • 1/2 cup unsalted butter (1 stick) melted

Filling

  • 8 ounces cream cheese softened to room temperature (light cream cheese works great too!)
  • 1 can sweetened condensed milk (14 ounces)
  • 1/2 cup fresh key lime juice about 12 key limes for that vibrant flavor!

Garnish

  • Fresh key lime slices for a zesty garnish
  • Whipped cream for a light and creamy topping (sugar-free or light whipped cream if preferred!)

Instructions
 

  • Combine your graham cracker crumbs with the melted butter in a small bowl. Stir well until all the crumbs are evenly coated – this ensures a perfect, sturdy crust!
  • Press the buttery crumb mixture firmly and evenly into the bottom and slightly up the sides of a 9-inch pie pan. This will be your delicious no-bake foundation.
  • In a large mixing bowl, beat the softened cream cheese with a hand mixer until it's wonderfully smooth and fluffy. Aim for no lumps to achieve a silky filling.
  • Pour in the sweetened condensed milk and the vibrant key lime juice. Mix gently with the hand mixer until everything is just combined and smooth. Be careful not to overmix!
  • Carefully pour the creamy key lime filling over your prepared graham cracker crust, spreading it evenly.
  • Place the pie in the refrigerator to chill and set for at least 1 hour, or preferably overnight, for the best firm texture.
