Equipment

  • Muffin Tin

Ingredients

  • 1 pound cooked breakfast sausage
  • 2 cups protein pancake mix (like Kodiak Cakes)
  • 1.5 cups water
  • 0.25 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with cooking spray or a little butter to prevent sticking.
  • In a medium-sized bowl, prepare your protein pancake batter according to the package directions, usually by simply mixing the pancake mix with water until it's smooth.
  • Stir the cooked sausage, shredded cheddar cheese, and maple syrup into your pancake batter. Mix everything together gently until well combined.
  • Spoon the delicious batter into each muffin cup, filling them about three-quarters of the way full. Don't overfill them!
  • Place the muffin tin into your preheated oven and bake for about 18-23 minutes, or until the bites are beautifully golden brown and fully cooked. You can check for doneness by inserting a toothpick into the center of a muffin – it should come out clean.
  • Once baked, take the muffin tin out of the oven and let the bites cool for a few minutes. Carefully remove them from the tin and serve warm. Feel free to add an extra drizzle of maple syrup if you like!
