Ingredients
  

  • 1 cup gluten-free bread crumbs (or crushed gluten-free crackers)
  • 2 tablespoons minced fresh garlic
  • 2 tablespoons Italian seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • Sea salt and freshly ground black pepper to taste
  • 0.75 cup unsweetened almond milk
  • 2 pounds lean ground beef (or ground chicken/turkey for a lighter option)
  • 2 tablespoons sugar-free ketchup
  • 2 tablespoons mustard (Dijon or yellow)
  • 2 large eggs
  • red chili flakes Optional, a pinch for a subtle kick
  • Fresh parsley, chopped Optional, for garnish

Instructions
 

  • Prepare the Breadcrumb Mix: In a small bowl, combine your gluten-free breadcrumbs, minced garlic, Italian seasoning, onion powder, paprika, and a dash of salt and pepper. Pour in the unsweetened almond milk and let it sit for 5-10 minutes. This little trick helps make your meatballs wonderfully moist and tender!
  • Combine All Ingredients: Grab a large mixing bowl. Add the soaked breadcrumb mixture, lean ground beef, sugar-free ketchup, mustard, and crack in the two large eggs. If using, now is the time to add optional red chili flakes.
  • Mix Gently & Form Meatballs: With clean hands, gently mix all the ingredients until just combined. Be careful not to overmix, as this can make your meatballs tough. Roll the mixture into uniform, golf-ball-sized meatballs. You can use a cookie scoop for perfectly even shapes!
  • Bake to Perfection: Preheat your oven to 400°F (200°C). Arrange the meatballs in a single layer on a baking sheet. Bake for 23-28 minutes, flipping them halfway through, until they're beautifully browned and cooked through (internal temperature reaches 165°F/75°C).
