Ingredients
  

  • 1 large tub plain full-fat Greek yogurt approx. 26-32 oz
  • 15 Biscoff cookies
  • 2-3 tablespoons calorie-free powdered sugar or your preferred sweetener like maple syrup or honey
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, or directly in the yogurt tub, combine the Greek yogurt, powdered sugar (or your chosen sweetener), and vanilla extract. Stir until the mixture is completely smooth and creamy.
  • Carefully arrange and gently press the Biscoff cookies onto the surface of the yogurt mixture, ensuring they are evenly spaced.
  • Cover the bowl tightly with plastic wrap or a lid. Place it in the refrigerator to chill for at least 6 hours, or ideally overnight, allowing the cookies to soften fully and the cheesecake to set.
  • Once chilled and set, scoop generous portions, making sure to include the softened cookies, and savor your easy summer treat!
